Uhura is memorable as one of the first reasonably prominent black characters in SF and Soolin is a good example of a post Alien heroine. Neither of them had as much devellopment as perhaps they should, but Soolin wins because she stands up to Avon wheras Uhura never did to Kirk.

Can't remember Soolin ever having to fight with her hands.Uhura got her hands dirty a few times,one solo fight in an episode when the bridge crew was forced to battle other captive "thralls".Can't remember the name of the episode but I remember they had some kind of obedience collars around their necks.
Then of course there was this memorable scene:
